Please, can you find out from the supplier information about heavy metals in cocoa? Do you have those values documented from the laboratory?
Hello, I wanted to ask how it is possible that the last cocoa I bought tastes completely different from the one I bought from you. It tastes like green tea or something similar, but not at all like the good cocoa I've had before.
Thank you.
Can I just ask how it is possible that the cocoa is reduced fat even if it is unroasted?
Hi Adela, it depends on the customer's preference as far as cocoa is concerned, you may encounter different fattiness and also some difference in processing.
This powder is made in Peru from unroasted cocoa beans by thoroughly grinding after partially pressing the cocoa butter (pressing up to 40 C max - uncooked cocoa is known to contain more beneficial substances than roasted cocoa) and with a fat content of at least 10%. Full-fat contains at least 20%. All products with a lower value are classified in the reduced fat category. The fat content has a major influence on the taste characteristics of the cocoa. The fat content of the cocoa powder will have a major impact where only a minimum of ingredients are added to the cocoa (e.g. beverages), and a lesser impact where the cocoa is part of a more complex recipe.
Which cocoa is better? This or full-fat?
Hi Adele, I definitely recommend trying this cocoa. It is an unroasted high fiber cocoa bean of the Criollo variety. Have a nice day.
