Unlike conventional drying, lyophilization takes place at extra low temperatures. The plums are first rapidly frozen and then slowly dehydrated in a vacuum. This way, they retain most of their important nutrients, including naturally occurring vitamins and minerals, especially vitamin K and potassium. Without water, they also have a long shelf life without the need for any preservatives.
