The way cattle are raised has a significant impact on the resulting quality and taste of the meat, so when choosing it, we also pay attention to how the animal was raised.
The Scotch that we have chosen for our dried meat is grown year‑round on pastures with species‑rich meadows located at an altitude of about 500 m in the White Carpathians and Beskydy Mountains. In the winter, cattle are fed with hay, haylage and mineral salt. It goes without saying that he has constant access to water and feed. All the meat of this farm is of BIO quality.
Our jerky is made from a part called the lower scarf. In 90% of cases, the meat is from heifers of the Aberdeen Angus breed, no older than 30 months, so the meat is less fatty, fibrous and tough.
