Vilgain Cacao is a powder made from raw, unroasted Criollo cacao beans, primarily sourced from certified organic farms in Peru or Ghana.
A noble and prized variety
Criollo cacao plants are highly sensitive to growing conditions, making up just one percent of the global harvest. However, they offer the finest and most aromatic taste of all varieties. Criollo beans stand out for their velvety smooth flavour, with a vibrant mix of fruity and spicy notes, free from acidity and bitterness.
Unroasted and non‑alkalised beans
The cacao beans are processed through fermentation, then ground and heated to produce a fine cacao powder. This method preserves a wide range of minerals and vitamins. Additionally, the cacao is non‑alkalised, which helps retain its antioxidants and polyphenols.
