The meat comes from Czech breeders from the Doupovské hory, mountains near the famous spa area of Karlovy Vary with excellent climatic conditions. The climate conditions guarantee that the popular Angus and Limousin breeds, which graze here all year round, thrive. These breeds are the evergreen of the meat industry, the Scottish Angus for its fine texture and the French Limousin for its good proportion of muscle to fat.
A combination of modern techniques and hand‑processing
The fresh meat is first gently and evenly dried on a unique drying system to create a unique texture and cured on fragrant oak wood. The meat is then hand‑cut into small strips.
