Polyphenols as the signature of early harvest
Polyphenols are natural plant compounds with antioxidant properties that the olive tree produces as its natural protection. Our oil contains 1,473 mg of polyphenols per kilogram, which is an exceptionally high value. Polyphenols also include hydroxytyrosol and its derivatives, which contribute to the protection of blood lipids from oxidative stress.

The quality of olive oil is determined already at harvest. That’s why we use Olympio varieties from the western Peloponnese and cold-press them no later than 8 hours after harvest to preserve as much as possible of what makes quality olive oil an exceptional product.
Why does quality oil sting?
A slight bitterness and a gentle stinging sensation in the throat are not a defect, but a sign of high-quality extra virgin olive oil from an early harvest. The typical peppery aftertaste is caused by oleocanthal, one of the most important polyphenols naturally present in olives.
