Vilgain Fleur de Sel de Guérande is a unique 100% natural French salt that is made up of small white crystals in the shape of flowers. It is also known as Celtic Salt.

Salt created by the natural action of the sun and the sea

It is formed in the salt marshes of the Guérande region where seawater flows through a system of clay ponds. These ponds also filter the water. The sun evaporates the water and creates concentrated salt ponds from which farmers then collect salt by hand on sunny evenings. Only limited quantities are collected, so salt is very scarce. It is not mined from the ground or from rock like regular salt is.

Authentic delicate taste

It has a fine texture that allows it to dissolve quickly. It is also less salty, so it does not overpower the dish's other flavours and helps them stand out. It is also great for garnishing. However, due to the higher moisture content, it is not suitable for grinders. Salt is not chemically purified and retains a wide range of important minerals.

Our Fleur de Sel salt comes from the wetlands around Mesolonghi, a port town in western Greece. The lagoons of this vast protected area naturally filter the water. The sun evaporates the water, creating concentrated salt ponds, from which farmers hand‑harvest the salt on sunny evenings. Harvesting takes place only in limited quantities, making the salt very rare. It is not mined from the earth or rock like common salts.
