We grind the corn in traditional wooden mills immediately after harvesting, thus reducing the oxidation of the raw materials to a minimum. Extrusion with a bronze nozzle is considered to be one of the most reliable production methods, creating a coarser surface on the pasta to which the sauce adheres better.
